Mom’s Carrot Pudding !

This recipe is the recipe that my mother cooked every Christmas for the sixty years that I knew her . It was tradition every year ! Christmas Dinner Dessert !

You will need a large bowl and all your mixing tools .  Sealing jars  with lids for the pudding . A large pot for boiling the jars once they are filled and a towel.  Tongs to pick out the hot jars when done and a cooling rack .

CARROT PUDDING

1-cup of suet ,  1-cup of raisins (soaked) , 1-cup of currants (chopped), 1-cup grated carrots , 1-cup of grated potato , 1-cup brown sugar , 2 – cups sifted flour , 1 tsp. Baking soda , 1 tsp. salt ,  1/4 cup grated apple , 1 tsp. vanilla , 1/4 tsp cinnamon , 1/8 tsp nutmeg .

Mix these ingredients very well , fill jars about 3/4 full and put on sealing lids.  Put the filled jars in a large flat bottomed pot ( canning pot) fill with cold water until it is about 3/4 of the way up the jars and lay a towel over the top of them.  Once the water is boiling , shut down the heat so that it is just simmering and simmer for about 2 & 1/2 hours .  Once done lift the jars out and put on a cooling rack and leave until totally cooled.

This pudding will last for a very long time once it has been canned in this way.

When you get ready to eat it , take a jar and put it into a hot water bath until the pudding is warm again. Take off the lid and put into serving bowls , top with the sauce which I will give you in a moment, top again with either whipped cream or ice cream .  You can also heat in the micro wave just remove the metal lid and cover with a piece of cloth or paper towel . There was no micro wave when we were growing up so reheating in the hot water bath was the way it went.  (:

PUDDING SAUCE :

In a pot on the stove on medium heat put -1/3 – cup of sugar , 1 tbsp. cornstarch , 1 cup water and about 1 to 2 tablespoons of butter .  Cook until all ingredients are melted and thick  , stirring all the time.  Do not leave , it will burn . Turn off and serve it hot over the warm pudding with the ice cream or whipped cream or both . Its all yummy!

You can also take other flavoring and add to the sauce . We just ate it plain like this but I know my daughter has put in maple flavoring and has tried a few others and it makes it equally delicious just fancied it up ! So if you have a flavor that you really like give it a try .
