Oatmeal & Chocolate Cookies !

What is better then nice warm cookies and a cold glass of milk .  Here are two of my favorite recipes that I have been using for over forty years.  Hope you enjoy them as much as my family and I have .

OATMEAL COOKIES !

Blend together in large bowl  – 1-1/2 Cups shortening  ,  1-1/2 Cups brown sugar  , 3 – eggs  – 3 tablespoons water , 1-1/2 teaspoons vanilla .

Mix together 2-1/4 Cups flour , 1-1/2 teaspoons baking soda , 1-1/2 teaspoons salt  4-1/2 Cups of  rolled oats .

Optional ingredients are: 1 – cup of either  nuts or coconut  .  Changes them up a little.  The coconut is very delicious , I’m a coconut fan . On occasion , I have put in dried cranberries or raisins . That to has been a hit around my house.

Mix the dry in with the wet ingredients blend well .  I then put the cookie dough into the fridge for about a hour it lets it set up . You do not have to do this if you are in a hurry .  Its just something I do.

Preheat your oven to 375 degree ‘s and  on a greased cookie sheet or a cookie sheet with parchment paper spoon the batter on .   Put into the oven and cook 12-15 minutes depending on your oven or how large you make your cookies. When done and golden brown remove from the oven and cool on a cookie rack.  This recipe should yield about 3 dozen cookies

 

RECIPE NUMBER TWO!   CHOCOLATE CHIP COOKIES !

Blend together in a large bowl – 1 half Cup  brown sugar , 1 quarter Cup white sugar , 1 half Cup shortening , 1 egg , 1 teaspoon vanilla

In a smaller bowl blend together – 1 cup and 2 tablespoons flour , 1 half teaspoon baking soda , 1 half teaspoon salt  , 1 half package of chocolate chips , white or brown your choice or some of both .

Then mix the dry ingredients in with the wet , blending it well .

You can also add nuts or raisins to this recipe  this to is optional.

Again I let my cookie dough sit in the fridge to set up.  I preheat my oven to 375 degree’s .  Place my dough on a greased cookie sheet or with parchment paper .  Cook 12-15 minutes until golden brown remove from the oven and cool on a rack. This recipe will yield about a dozen cookies .

So after all that hard work take out your nice cold milk pour yourself a  big glass , grab a couple cookies and a good book and have a break .
