Scotch Waffles !

We cook these for  supper when we feel like breakfast for supper ! Why not have a backwards day its fun and if you dress the waffles up right , its dessert.  So you get it all !

We have special lunches  with our family and this is what my mom used to cook.  She would make fresh strawberry  & Huckleberry toppings  .  She would have whipped cream , ice cream ,  chocolate sauce & real maple syrup . So we could mix an match what we wanted. Crispy maple bacon and sausages for the side.  So here is the recipe and you can start your own tradition.

1-egg , 1/2 cup icing sugar , 1/4 cup melted butter     Beat together.

Mix together – 1 cup flour  – 2 tsp. Baking Powder – 1/4 tsp Baking Soda . set aside

Mix 2/3 cup of milk – 1 – tsp vanilla

Start mixing the flour and milk into the egg, icing sugar and butter , add the milk and flour alternately .  Mix gently and only until the ingredients are blended.  Batter will be fluffy spoon gently onto the heated waffle iron.  When done add your favorite topping and enjoy.

If you do not have a waffle maker you can cook these like pancakes and add your desired topping’s  all will be good !

She would start the strawberry topping early .  She would cut up about a 2 pound basket into a bowl  sprinkle with sugar let stand at room temperature stirring about every hour so that the sugar gets blended and starts to make a sauce.  Frozen strawberries work really good for this method.

The Huckleberries she would take from the freezer and cook . She would use about 8 cups to 2 cups of sugar and cook until soft about half an hour , stirring constantly so it wouldn’t burn , when it was done she would stir in 1 tsp of butter and 1 tsp of vanilla to finish it off . Then set aside to cool .
